Whole Grain Croissant

WHAT

A wholesome, flaky croissant made with whole grains and healthy fats, inspired by Blue Zone longevity diets. Lightly sweetened and optionally filled with almond paste, nut butter, or fruit preserves.

SUBSTITUTE

Use almond flour or mix in a small portion of white flour for lighter texture. Try different plant-based milks or fillings to suit taste and dietary needs.

PREPARATION

  • Activate yeast: Warm ¾ cup milk to 105–110°F, stir in honey or maple syrup, sprinkle yeast, and let foam 5–10 minutes.

  • Make dough: Mix flours and salt, add yeast mixture and 2 tbsp oil, knead 5–7 minutes until smooth, and let rise 1–1.5 hours.

  • Prepare fat: Flatten 6 tbsp cold butter or olive oil into a ½-inch rectangle and chill.

  • Laminate dough: Roll dough, add chilled fat, fold and seal, then roll and fold 2–3 times, chilling 20–30 minutes between folds.

  • Shape croissants: Roll dough to ¼ inch thick, cut triangles, add optional filling, and roll into crescents.

  • Final rise & bake: Let croissants rise 30–45 minutes. Preheat oven to 375°F, brush with milk if desired, and bake 18–22 minutes until golden.
